Secret Recipe Club: Rolo Cookies

Guess what time it is?  It's Secret Recipe Club reveal day!  If you haven't seen the weekly reveals from Secret Recipe Club, it's a great way to find new blogs and wonderful new recipes to try!  Every month, those participating get assigned a blog to peruse and select a recipe from for the big reveal day.  At the end of this post will be all of the recipes that were made for today's reveal.

This month, I was assigned the lovely blog A Little Nosh.  Amy is a full-time working mom with a cutie-pie little boy.  She has a tiny kitchen, but works hard at making sure she serves her family homemade meals every night.  She's also a Weight Watcher, so she knows all about balancing the healthy stuff with the occasional treat.  That's where my recipe selection came in this month.

As soon as I saw that one of her most popular posts was for Rolo Cookies, it was barely a moment before I clicked over to see what it was all about. 
Rolo-Cookies


A very simple cookie that starts with a box of chocolate cake mix.  I had My Youngest help me make these, but we both got a little frustated as the dough was very sticky.  So, I had to improvise a little when it came to forming the cookies.

I ended up taking some of the dough and then placing the Rolo in the middle, then added some more dough to form a ball around each candy.  Then, I smooshed them down a little bit.

These cookies do no spread at all, so you can place them fairly close together on the baking sheet.

The result?  Very moist and chocolatey cookies that had that nice melted caramel in the middle.  We really enjoyed these cookies, but I would probably use a different base cookie next time since the dough was a bit harder to work with than I had anticipated.

Sorry the dough was stickier than you anticipated. I don't remember it being too bad, but I did have a layer of brown on my palms when I was done. :-)
