A Little Bit of This, A Little Bit of That

Today's post is going to be a bit of a potpourri.

While I did make dinner last night... I think it needs some tinkering. I made Cooking Light's Panko Crusted Pork Chops from the October issue. While they were quite tasty, mine turned out soggy even though they were pan-fried, then baked in the oven... going to have to revisit the recipe and see where I went wrong. Sorry, no picture as they were not worthy of it.

Next up, my guest blog post over at The Voice of Mom is up!!! I'm so excited to have been able to join in and share my opinion over there. Cate from Sweetnicks and Sarah of Sarah's Cucina Bella are great bloggers who have already posted a ton of fantastic reviews of products that every family would be interested in knowing about. Finally, I thought since I don't have as much of my own content to share today, that I'd point out some fantastic food bloggers that I read every day. Each one brings their own unique thoughts to the table, so go check them out and you may find that you have some more reading to do - like me!

Nikki of Nik Snacks has a great sense of humor and each post is entertaining to read. She comes up with some creative recipes, too!
Lia at Swirling Notions shares her thoughts on food and wine. I had the pleasure of being interviewed by her for Cooking Light about 2 years ago, and she is truly a pleasure to talk to and you can see her articles in many national magazines.
Kristen over at Dine and Dish not only shares fantastic recipes, but also writes beautiful posts sharing her memories and snapshots of her family. Each post really evokes a different emotion when I read it.
Prudy at Prudence Pennywise is so creative at saving money while feeding her family fantastic food! In the current economy, we can all use tips like that. Also, you just have to love her writing style, fun and so witty!

Those are just a few of my favorite blogs... as you can see in my sidebar, I follow quite a few and will try to highlight my favorites from time to time.

Sometimes pan frying makes breading soggy because it's sitting in butter/oil.

Prudy - I believe the article ran in the April 2007 issue of CL. I can't find it on-line, but if you happen to have the old issue it's an article called "Your New Old Favorites". Some great dinner ideas in that one!

that girl - I thought that have been the cause... I may just bake them next time and skip the added oil (save some more calories that way!).

I just love food made with Panko crumbs- the fineness and texture leave what you are frying or baking nice and crunchy... I'm so sorry they came out a bit soggy... Panko is like the capital of Japan here hahaha
I love Prudence Pennywise, too. I want to be like her when I grow up.
