Baby Bok Choy

Last summer, a good friend of mine introduced me to Baby Bok Choy. First of all, it's so darn cute that you just have to buy it when you find it. An added bonus is that it contains loads of Vitamin C, Vitamin A and Calcium. It's another way to add some color to your diet. There are many ways you can prepare it, but I like to keep it fairly simple and prepare it similarly to my friend.

Begin by cleaning the bok choy thoroughly. Don't worry about drying it, you can begin sauteing it in a hot skillet with about 1 tablespoon of sesame oil and the water will help it wilt. After it wilts, I add just about 1-2 teaspoons of soy sauce. Once I put it in the serving bowl, I sprinkle some seasame seeds on it, and you have a very pretty side dish for dinner. Quick. Simple. Healthy. What more could you ask for?

baby bok choy is a near stable in my house since its a little less bitter than the "grown up" version.

Sounds like a great little side dish that I would never of came up with. Can't wait for the farmers market to start back up! Ond when you get your new oven, celebrate with a party cake!!!
