Family Dinner and Back to Blogging

Wow... that was quite a break! Hard to believe it's been several months since my last post, but I think the break was needed. I spent the last few months enjoying time with my family and traveling and just living for the moment when I wasn't at work. Not a lot of actual "recipe" cooking went on, but I do have some things I'll repeat and photograph to share here in the near future. I'll also have some things to share from our summer adventures.

As we gear up for the start of school... I'm starting to think about family meal time. We just returned from a week long vacation (more to come on that soon) and tonight was the first semi-real dinner I've made in a bit.

I've been grilling thin cut pork chops more frequently this summer... super fast and with just a quick drizzle of olive oil and a rub of your favorite seasoning blend, you'll have your protein ready to serve in about 10 minutes.

Just add in a nice tossed salad - I like to add slices of hearts of palm and halved grape tomatoes this time of year. We toss it with some Salad Supreme, olive oil and red wine vinegar. Another quick and easy side dish any time of year. I sometimes switch it up and make individual salads on everyone's plate. Not much more effort if you have prepped greens on hand and an assortment of salad toppings. It adds a bit of variety that part of our meal. Salads are a big part of dinner during summer months for us.

At the top of the photo you'll notice a dish of some crispy looking orzo... Baked Orzo is an old favorite side dish for our family. I try to keep the ingredients on hand for those nights when I want to do something a little different. We often have this dish as part of holiday meals, so it's fun to surprise the family with it on a random night for dinner.

I'm going to be doing some meal planning for next week so that we can start off the school year with some new favorites (I hope!) and I'll pull out some old favorites as well. Once I have the week planned, I'll share it here... we can all use a little inspiration when it comes to planning out meals for the week, right?
