Chippy Blondies {Recipe}

While it's been quiet around here, I've been busy between helping with middle school homework and getting certified to belay for My Oldest when he's doing his indoor rock climbing... oh, and also working on a fundraising project for our temple.  Yes, life has been a bit hectic lately!

Last weekend was no different, but I did find time Sunday evening to bake a sweet treat to have on hand for the new week.  I usually bake cookies, but I wanted to switch things up a little bit by baking blondies.  Baking makes me happy and is something I like to do to wind down after a busy weekend. I also love knowing that I have a homemade treat that we can enjoy during the coming week.

I would have made brownies, but I've had My Boys tell me often enough that they prefer vanilla to chocolate (shocking considering I am a huge chocoholic!), that I knew blondies would be well received.

This recipe comes together in less than 10 minutes and then it's off to the oven.  This recipe is very forgiving, you can pretty much throw everything together in the bowl of your stand mixer and let it come together.  I have written the recipe with instruction to add the wet ingredients first and follow with the dry ingredients... no additional bowl to use to combine the flour, baking soda and salt and no sifting needed.  I don't mind recipes that require doing that, but sometimes you just want to keep moving so that you can get the treats into the oven!  Baking from scratch doesn't always have to seem complicated, and this recipe clearly is about as easy as it can get.

The combination of milk and white chocolate chips melting throughout the batter makes for a soft and cake-like bar.  They are kind of like a cookie bar, more than a vanilla brownie - which is what I think of when I see a recipe for a blondie.  As soon as I pulled these from the oven, I knew they couldn't be called anything other than blondies.  This is the perfect after school snack or even a late day pick-me-up with a glass of milk.

Chippy Blondies

Recipe by Patsy Original

  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup (1 stick) salted butter, melted
  • 1 1/2 cups  all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk chocolate chips
  • 1/2 cup white chocolate chips
Cooking Directions
  1. Preheat oven to 350 degrees. Prepare a 9x9 inch baking pan with aluminum foil; set aside.

  2. Combine brown sugar, vanilla and melted butter in the bowl of a stand mixer; blend until well combined.

  3. Add flour, baking soda and salt and continue to mix until thoroughly combined; scrape the sides of the bowl to ensure all dry ingredients are incorporated.

  4. Add the milk chocolate and white chocolate chips and mix until well distributed.

  5. Pour batter into the prepared pan and use a spatula to ensure it is evenly spread to the edges of the pan.

  6. Bake for 22-25 minutes or until the sides begin to pull away.

  7. Cool on a wire rack for 10 minutes and cut into pieces.

  8. To ensure clean edges when cutting, put the pan in the refrigerator for a couple of hours and then cut into pieces.

I'm like you, baking is therapy to me! I also prefer chocolate over vanilla, but I do love a good blondie! These look pretty darn good with all the chocolate! Yum!

I'll have to make these for Grumpy! He loves blondies...but I'll have to use all vanilla chips (his fav!). Must be a boy thing to not like chocolate?? lol

I totally prefer chocolate. So does my husband. But I have one boy who (where did he come from?) thinks he doesn't like chocolate. Whatever. ;) Love blondies!
