Banana Coffee Cake {Recipe}

Last week, I had some really ripe, brown bananas staring at me.  I usually go to one of my favorite banana bread recipes, but this time... I just wanted to make something different.

My Husband and My Oldest both love coffee cake... and it's not uncommon for them to dig into a package of Drake's coffee cakes every once in awhile.  It's comfort food for them...

I'm not sure why I haven't really made coffee cake before, but when I was trying to decide how to use those fabulous, brown bananas I decided that coffee cake was the way to go this time.

The mashed bananas not only add sweetness to the cake, but also keep it moist.  The cinnamon and banana flavors come through nicely without being overwhelming.

This cake would be a great late day treat as you enjoy a cup of coffee or tea.  It also makes a nice dessert that would be a nice change of pace when sharing with friends.




Banana Coffee Cake


Ingredients
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 6 tablespoons butter, melted
  • 1 cup light brown sugar
  • 1 1/2 tablespoons ground cinnamon
  • 3/4 cup butter
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 cup mashed ripe banana
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • eggs
  • 1 1/4 cups milk
  • 3 3/4 cups all-purpose flour
Cooking Directions
  1. Preheat oven to 400 degrees, and line a 9x13 baking pan with parchment paper.

  2. Prepare the streusel topping by combining 1 cup sugar, 1/4 teaspoon salt, 1 1/2 cups flour, 1 tablespoon cinnamon and the 6 tablespoons melted butter in a bowl.

  3. In another bowl, prepare the filling by mixing 1 cup brown sugar and 1 1/2 tablespoons cinnamon together.

  4. Prepare the cake by beating together the 3/4 cup butter, 1 teaspoon salt, 1 cup sugar, and 1/3 cup brown sugar, 2 1/2 teaspoons baking powder and 2 teaspoons vanilla with a mixer.

  5. Add the eggs, one at a time and beat until well-combined.

  6. Next, add the mashed banana and mix until incorporated. Add the flour to the butter mixture and gently mix until combined.

  7. Pour half of the cake batter into the prepared 9x13 pan. Sprinkle the filling on top of the cake batter, then pour the remaining cake batter on top.

  8. Sprinkle the streusel topping on top of the batter.

  9. Bake for 45-55 minutes, or until a toothpick comes out clean when inserted in the middle.

Before I got to the part where you said moist, my thought process was this must be really moist and delicious! Love it and next time I'll make this. I just made banana bread yesterday!
