Homemade Pasta

Do you have kitchen gadgets and such that you simply "had to have", that have found a home at the back of a cabinet or even worse... in the basement on a shelf?  A couple of years ago (Yikes! I hate to admit it's been that long), My Husband bought me the pasta attachments for my Kitchenaid and I used them a handful of times before they were put back into their boxes for one reason or another.

Then, the other day a good friend of mine posted a picture on Facebook that showed her Kitchenaid in action making pasta.  Well... it only took one comment from My Husband to get me into action and planning to make some homemade pasta again.

I decided to use a pasta recipe I found on Food Network's site, but ended up changing it a bit since I didn't have "extra large" eggs on hand.  Honestly, I thought that was odd because 99% of recipes say to use large eggs... who keeps extra large eggs on hand all the time?  Anyway... I made adjustments based on how the dough came together and I think it turned out just fine.

I wish I had gotten a picture of My Oldest helping when we were putting the dough through the machine, but I only had 2 hands and that part was moving quick.  Once we had all of the pasta cut into fettucine strands and hung on the pasta rack, I was able to take a few photos.  Of course, by then, My Youngest popped in to smile in the background and I have to say, I love this picture!

Both boys were away for several days last week enjoying some time with their grandparents and having a lot of fun going and doing things with them.  I missed them quite a lot and ended up reading 2 and a half books while they were gone.  I enjoyed doing some reading, but the house was a bit too quiet.  I'm not looking forward to the days when they are off to college and out of the house.  I'll be soaking up every moment that they are still My "little" Boys.

The pasta turned out really well and I did try a new shrimp scampi recipe to serve with it... but, I want to make it again before sharing that one with you.  Needs a tweak or two to ensure that the directions will work once I share it.

Easy Homemade Pasta

Ingredients
  • 4 cups all-purpose flour
  • 5 large eggs, beaten
Cooking Directions
  1. Add flour to the bowl of a stand mixer, add beaten eggs. Using the dough hook attachment, allow to combine for 2 minutes at a low speed. Stop and scrape the bowl to ensure all flour is being incorporated.

  2. Mix for an additional 3 minutes, then stop and feel the dough to see if it is sticky. If it is sticky, add 1/4 cup more flour and mix again for 3 minutes.

  3. Turn dough out on to a late piece of plastic wrap and completely wrap it up. Allow to rest at room temperature for about 20 minutes.

  4. Once ready to shape or use a pasta machine (or attachment for Kitchenaid), cut off about 1/4 of the dough and flatten so that it will easily pass through the machine. Following the instructions for your machine/attachment roll the dough to the thickness you prefer, then use the appropriate pasta size attachment to create the noodles.


  5. Allow to dry on a pasta rack for about 15-20 minutes before adding to vigorously boiling water. Will take 5-8 minutes to cook to al dente.

Now this is a reminder for ME to break out my pasta attachment!! Yours looks like it turned out great!

I know what you mean, Joanne! Nothing like seeing someone else break out the pasta attachment to motivate you to do it, too! Can't wait to see what you create!
