Crunchy Panko Cod
It's been a really busy week or so... and I am finally catching a moment do a little writing. Let me start by saying that I did something really clumsy and stupid a week ago... I dropped my most precious DSLR on the floor... just in case you didn't know what would happen when you do that let me tell you what will happen. Your lense will break away from the body and the shutter will no longer work properly... and basically, you will have a camera that won't do anything anymore.
Yep, when I drop something, apparently I do it with the intent to fully break something that I use almost every single day. I was so mad at myself that both of My Boys and My Husband kept telling me it was not a big deal and that it can be replaced. It's so nice to have understanding men in my family. It's even nicer that My Husband went on-line and ordered me a replacement right away! We went with a manufacturer refurbished camera and lens... and let me tell you, I can't even tell! There is not a scratch or mark anywhere on the camera and it is like brand new.
I've been playing with it a bit to make sure it works properly and I'm pretty certain it's a keeper. So, this is my on-line shout-out to My Husband that he is AWESOME and I love that he was so willing to take care of the big mistake I made so quickly. He's truly the BEST!
Now, I know you are not here to have me go on about a camera, but would rather see some food being shared. So, let's get started with a photo of the Crunchy Panko Cod fish I made tonight.
Now the fish is only coated on one side... mainly because once it's baked, it becomes too fragile to turn over. The panko breadcrumb mixture can be varied depending on your taste and what spices you have on hand... go ahead, get creative!
This was nice light tasting meal... the fish was baked and the oil added was just enough to make sure the bread crumbs were moistened so they would "stick" to the fish.

I must admit that I LOVE LOVE LOVE panko breadcrumbs. If you haven't used them in place of traditional bread crumbs, you don't know what you are missing! I use them for so many things and have found that if I make something "new" a bit crunchy with them, just about everyone will declare this "new" food delicious! This is exactly how I got My Boys to eat cauliflower - that and roasting it until it has that caramelized goodness going on - which was included in tonight's dinner.

Ingredients
- 1 cup Panko breadcrumbs
- 2 teaspoons lemon rind (about 1 lemon)
- 2 teaspoons minced garlic
- 2 teaspoons Italian seasoning
- about 1 tablespoon olive oil
- 1 1/4 pounds of cod or other white fish (tilapia or sole would also work nicely)
- cooking spray
Directions
- Preheat oven to 425 degrees. Cover a rimmed baking sheet with aluminum foil, then place a wire rack inside the baking sheet; spray with cooking spray.
- Pat the fish dry with paper towels and then place on the wire rack.
- Combine the breadcrumbs, lemon rind, garlic, Italian seasoning and olive oil in a bowl. Spoon mixture on to the fish and press gently so that it adheres to the fish.
- Bake for 17 minutes, or until the fish flakes easily with a fork.
