Eat. Live. Be. Reboot: Extra Veggies, Please!

This has been a very good week.  Yes, it has... I filled up our fridge with tons of produce when I went food shopping and I've managed to make a ton of healthy choices when hunger would strike.

I found this on Pinterest when I was searching for some motivating healthy quotes to keep on my healthy living board.  This simple statement is how I am approaching Eat. Live. Be. Reboot.  A friend on Facebook updated her status recently to say that she was going on a diet, but it was more of a change in focus.  What she can have to be healthy in all ways, not what she can't have... forget thinking about depriving yourself!

This week, Cate, Sarah, Joanne and I are sharing something that inspired or motivated us from a magazine (and I added some on-line tidbits as well!) to stick to our goals.  I had plenty of material to work with since just several of my favorite magazines arrived just before the start of the New Year.



I have subscribed to Cooking Light for eons at this point.  And, I really enjoyed their Healthy Living Series they did last year.  If you missed it, each month they introduced a different healthy habit and a few people who were struggling with it.  They shared what the challenges were and how they suggested to get past them. 

This month, it's all about piling on the veggies.  The Cooking Light article (recipes from the article are also available on-line, as well as tips) includes people who struggled last year with getting in their 5-a-day and what helped them begin adding them into their diet.

The one statement from the article that jumped out at me was "Fruits and vegetables are beautiful for a reason - to entice".  This was from Deborah Madison, who is a chef and author of several healthy cookbooks.  What a statement, right?  Something I will keep in mind when that desire for a snack strikes!

This week, we have had salad with dinner nearly every day.  And, those days when we didn't another veggie was added to the dinner plate.  I'm also working on finding ways to enjoy whole grains... that one is a little tougher, but I'll get there. 

I've had an amazing week of working out - all but 1 day, I got in 40 minutes on the treadmill.  The last two days, I've added another 30 minute workout at the gym we have at work to include a warm-up and then weight/strength training.  Feels good to make myself take a lunch break, even if it isn't to go out for lunch.  Making time for my workouts makes me feel good, happier and I think so much clearer.  Of course, getting up at 5:15 a.m. to hit the treadmill means I am ready to collapse much earlier than I used to... but, I think it's worth it.

How do you get your veggies in during the winter?  I'm trying to play around with different veggies to see if we can find some new one's we enjoy.

Happy New Year! I usually make tons of vegetables soups for winter to keep the vegetables going. . .

I'm all about getting in the veggies...I think I probably get 10-a-day most days...I think eating a salad for a meal every day really helps and healthy veggie soup also!

I hate it when people accuse me of being on a diet, because really...I'm just eating healthy so that I can FEEL healthy!
