Last week, I was really not inspired to cook. Which is why you didn't see many posts here. One night last week when My Husband got home, I was still trying to figure out dinner... I had some sausage in the fridge that I needed to use and was going to do something simple like toss it after cooking it with some pasta. Since that wasn't a terribly interesting idea, he suggested we try to figure something else out.
Being from the Mid-West, I grew up with biscuits and gravy - a traditional Southern breakfast food. I didn't always love it, but as I got older I really loved it! It was a favorite late night indulgence after a night of dancing with friends or when we'd go out for breakfast on the weekend. I don't see it often on menus here in NJ, but then I also tend not to search for it out here - it's not exactly the healthiest food.
As you can imagine, when we happened upon a fairly straight-forward recipe for sausage gravy over at Big Oven that it was only moments before we decided it would be a breakfast for dinner kind of night.
I've never made gravy before and felt like this is something I should learn to do. I've heard stories of lumpy gravy or gravy that never thickens up - the 2 things you never want to happen.
Fortunately, my first attempt at gravy went so easily that I don't know why I never made it before! What made me even happier was that My Boys both enjoyed the biscuits and gravy. It's nice to know I've got another quick and easy weeknight meal idea that will please everyone. Indulging in something like this once in awhile is not so bad and I love being able to share recipes like this with my kids.
Next time you are looking for something simple to make for dinner (or even breakfast), make biscuits and gravy! You can find the recipe over at Big Oven's website HERE.
