Happy Passover! Decadence in a Flourless Chocolate Cake
Happy Passover, to everyone celebrating! We had Seder at our house last night and it was a night filled with tradition and delicious food. We tend to stick to the same menu each year, and you can take a peek at what that has been like in last year's post HERE.
One of the things I enjoy about the holidays is having all of our N.J. family together. It would be even better to have some of our family that lives farther away with us as well. What warms my heart even more is that My Boys look forward to our family gatherings as much as I do. My Youngest was very happy about having everyone over last night and said "I love all the holidays because that means we get to spend more time with our family." Makes me want to give him a bigger hug just thinking about that sweet thought. My Oldest was very excited to read the 4 questions in Hebrew. Overall, it was a fantastic evening spent with family.
Every year, I have made different desserts for Passover. Last year, it was the Lemon Cheesecake (I shared the link above) and I made more of the Matzah Buttercrunch again this year.
Even with fabulous desserts in previous years, I really wanted to find one that would be a perfect end to a holiday meal. You know the kind, the dessert that is rich and chocolatey and TOTALLY worth the calories and the necessary workout the next day.
Well, I would say that I have found that dessert! The Flourless Chocolate Cake with Chocolate Glaze I found at Epicurious was rich, decadent and fudgey - everything a chocoholic (like me) looks for in a perfect ending to a meal.
The recipe does require separating eggs and whipping egg whites into a gorgeous white, fluffy mixture before folding them into the chocolate mixture. As I was doing this, I was so pleased with how I have improved at these techniques. The recipe said that the cake would fall - and it certainly did! But, I wasn't worried because the instructions said to press it down so it would be even, then it would be inverted onto an round tart pan bottom. All went exactly as it was supposed to, and if I can do this then anyone can! Give this a try next time you want to end a special meal with something that will satisfy that sweet craving.
