Bunco Night with the Girls (Brie Bites in Phyllo Cups)

 Last night I hosted our montly Bunco game and as always, it was a ton of fun!  We always start the night with appies, wine and desserts ... no one bothers to eat dinner before they come.  It's always a night of catching up with each other because with the colder months we don't run into each other outside in the neighborhood quite as often.

I've read several blogs lately where women have said that one of their resolutions is to make time for themselves.  I wholeheartedly agree with that, which is why I very rarely miss my night with the girls each month.  It's good to hang out and talk about anything and everything and have some laughs along the way.  It's a way of recharging and being able to come back to the normal routine.  As they say, if Mama ain't happy, the no one is gonna be happy.  So, if you don't already have time set aside for yourself each month, make a date for lunch or an afternoon of shopping with a good friend.  You will be happy you did!


I made two different appetizers to share, and I'm going to share the simplest of the two now.  A friend made these for us a couple years back and they are truly scrumptious!  The funny thing is, another friend brought a slightly different version of them to Bunco, too!  Rather than adding some sprinkled brown sugar, she added fig preserves... and they were oh-so-very-addictive!  Great minds think alike!


 These are so simple to make!  You will want to keep the ingredients on hand so you can pop them into the oven if you are heading over to spend an evening with friends or you have an impromptu dinner guest.


Sweet Brie Bites

Ingredients

  • Prebaked Phyllo cups
  • Brie
  • Brown sugar

Directions


  1. Preheat oven to 400 degrees.
  2. On a parchment lined baking sheet, place the phyllo cups.
  3. Add a small piece of brie to each phyllo cup, then lightly sprinkle brown sugar over the top.
  4. Bake for 5 minutes, or until melted.  Serve warm.

I always keep a couple boxes of phyllo tartlets on had. They make elegant looking appetizers with hardly any work at all.
