What's For Dinner Wednesdays: Beef Pot Roast

Again, I apologize for the sporadic posts this week! We've had something going on every night between soccer practice and Back to School Night. I hope to get some cooking in this weekend so next week you'll have some great new recipes to read about.

For this week's What's For Dinner Wednesdays recipe, the selection was Beef Pot Roast with Maple Sweet Potatoes (recipe can be found HERE). The recipe really uses the fall seasonal ingredients by incorporating sweet potatoes with the roast. It's a simple recipe, and if you are a fan of pot roast, I am sure you will love this recipe.

While I did make this week's recipe, I didn't take a photo. That gorgeous shot you see above is courtesy of the folks at Beef. It's What's for Dinner. The reason is because this one just didn't do much for us as we really are not fans of this cut of beef. The sweet potatoes were a hit with My Oldest who I think could have eaten them all by himself.

Great blog, thanks for the hard work.
I ended up using this week's beef recipe as inspiration to create a new one, which we really liked. It's not much like the original recipe though.
