Steak & Gorgonzola Quesadillas
Last night was beautiful out so, while My Boys were outside playing and enjoying themselves I got the grill going. I had picked up some more London Broil on sale this week, so I put one in the freezer for later and lightly seasoned one for the grill.

Since this was a rather large piece of meat, we had leftovers. I love when that happens when we have a busy week of baseball games like this one. So, tonight after we got home from My Youngest's game I decided quesadillas would make a quick and easy dinner. I pulled out the leftover sliced steak and added some crumbled gorgonzola cheese to the tortilla. Then, I thought a drizzle of balsamic vinegar would add a final layer of flavor to bring it all together. I've had these ingredients together before so I knew they would work.

The cheese melted into the steak and balasamic vinegar perfectly to create an incredible balance of flavors. The gorgonzola was not overpowering as it can be on it's own, but rather nicely complimented the steak BECAUSE of the balsamic vinegar. Definitely use a good quality balsamic vinegar when putting these together as the flavor will shine and pull it all together. I will be using leftover steak this way more often since it was quick and easy for a weeknight.

That's a great way to use leftover London Broil. I actually have one in my freezer as well since it was on sale at my grocery store last week. It's planned for Memorial Day. I usually put my leftover in a salad but I love the idea of steak quesadillas.
