O'Henry Bars from Taste This!

I recently received a new cookbook called Taste This! Thank goodness I did, because I needed inspiration for a treat to bring in for the Teacher Appreciation luncheon!

This cookbook is a compilation of family recipes with short ingredient lists. Ideal for the busy home cook who wants to put a nice dinner on the table each night. Or perhaps like me who volunteered to bring a treat for the Teacher Appreciation luncheon and couldn't decide what to make! Each recipe contains ingredients that most people will have in their kitchens already. You may have to pick up one or two ingredients for a couple of the recipes, but that shouldn't deter anyone. In fact, the photos are so appetizing you'll be willing to make that extra trip to the store so you can complete the recipe.

Gina von Esmarch is a mom blogger who writes Bowl Licker who decided that she'd like to put together her favorite recipes for others to enjoy. She says: "This book is a collection of recent family and urban recipes with subtle tweaks and twists. May it be a guide to inspire your inner cook and bring fun to meals with your family and friends. Many recipes can be made in advance which will allow the flavors to become enhanced so that when it comes time to visit with your guests, you can move the focus from your kitchen to your dining room."

I decided to use one of her recipes for the luncheon since I volunteered a bit late to bring something. The O'Henry Bars seemed like the perfect treat to bring in, and only required the use of a microwave for cooking. Really can't beat that.

The only problem I had was that I underestimated how much 7 cups of cereal would be and didn't use a big enough bowl. Next time I'll know better, as it was a bit of a challenge to get the sugar, syrup and peanut butter mixture to cover each cereal bit. I managed and they came out perfectly! There were simple to make and taste like they took a bit of time to put together. I tasted one after I cut them and they are definitely a sweet treat!

From Family, Friends and Food
I was able to cut them into nice reasonable bite-size pieces so all of the staff should get a chance to taste them. I had a few that didn't cut as nicely, which is fine because I kept those for us to nibble on at home. I even snuck in one to My Oldest's lunch box this morning as a treat for his dessert. Now, don't think I'd only give these to My Oldest, the Younger one chose hot lunch for today so he'll get the dessert that comes with that.

Happy Friday! I hope to have some more recipes to share come Monday! We are going to be having dinner with a couple of family's that we are close friends with tomorrow night, so I'll have some appetizer ideas to share after the weekend. You won't want to miss that!


O'Henry Bars

Ingredients

  • 7 cups Special K Cereal
  • 1 cup sugar
  • 1 cup dark Karo Syrup
  • 1 1/2 cups smooth peanut butter
  • 6 oz. semi-sweet chocolate chips
  • 6 oz. milk chocolate chips
  • almonds, chopped (optional)


Directions

  1. Grease a large size bowl. Add syrup and sugar. Microwave for 30-40 seconds. Stir in Peanut Butter.
  2. Pour mixture over cereal and mix well.
  3. Grease a 9x13 baking pan.
  4. Press mixture into pan.
  5. Melt both chips together in microwave, and frost with mixture. Sprinkle with nuts, if desired.
  6. Cut into squares and serve. (I chilled mine overnight before cutting and that worked out very well.)

They look really good and are so perfect for a day when it's hot out and you want a treat but don't want to turn the oven on!
These sound so easy and yummy! I love sweet treets like these, especially since the weather is warming up!

I make these all the time, but with light corn syrup instead of dark. Yum!

How funny, I was at K-Mart yesterday and saw an O-Henry bar and commented to my daughter that I hadn't seen those in years. I almost bought one but resisted the urge. These look like a great treat! I can almost taste them. ;)

I like this O'Henry Bars recipe. these O'Henry Bars are sure to taste great and are extremely nutritious as well. I am going to bake a batch for the holidays when my kids will be at home. I'll be sure that what they are eating is healthy.
