Deliciously Simple White Chocolate Tartlets

A weeknight treat is pretty rare around here as I don’t always have time to create a really nice dessert after work, homework, and everything else we have going on each night. So, when I received a copy of Sandra Lee Semi-HomemadeDesserts 2 I dug in because everything she makes is quick and simple. It’s not from scratch, but sometimes it’s ok to take short-cuts.

I love that the cookbook has photos of every recipe, as I’ve said before that’s very important to me. When I saw a simple recipe for making a creamy little tartlet I was all over it! I already had the mini graham cracker crusts in my pantry from some other brainstorm I had that passed over before I could remember to use them.

They went together in less than 10 minutes, which is perfect for a weeknight. Rather than make shaved chocolate curls, I decided to add some grated chocolate over the top of them.

We all loved them! So very creamy and yummy! If you are ever in need of something quick and simple, this is one recipe that will fit the bill. My Oldest asked if I would make bigger tartlets next time! I do think I will play around with flavor combinations to see what else I can come up with since they were so simple to make.

White Chocolate Tartlets

Ingredients

  • 1 ¾ cups milk
  • 1 package (4 serving size) instant white chocolate pudding and pie filling
  • ½ cup whipped cream cheese, softened
  • ½ teaspoon vanilla
  • 1 (4 oz) package miniature graham cracker pie crusts
  • White baking bar and milk chocolate bar, shaved into curls (optional)


Directions

  1. In a large bowl, combine milk and pudding mix; whisk together for 2 minutes, then let stand for 3 minutes or until thick.
  2. In a medium bowl, combine cream cheese and vanilla; beat with an electric mixer on low speed until smooth. Add pudding and beat until smooth.
  3. Scoop 5 tablespoons of the cream cheese-pudding mixture into each pie crust. If desired, garnish with chocolate shavings.

Yummy - nice & cool for a warm spring day, too! My mom makes something similar using the cheesecake flavored instant pudding - but I'm a big fan of white chocolate, so I'd stick to this recipe!!!

I am an unabashed white chocolate lover. I've seen the mini grahama crusts before, but have never bought them. So perfect, I am goign to try now that I have a recipe. :)
