Cherry Tomato Salad with Walnut Tarragon Dressing

Last weekend, some friends invited us over for dinner. I wanted to bring along a salad, but not your typical leafy green salad. As many of my food blogging friends, I have a pile of recipes I want to try that goes on forever so that's where I went searching. At least I could knock one more off of my list!

When I came across the recipe for Cherry Tomato Salad with Walnut Tarragon Dressing from Cooking Light from June 2007, it appealed to me right away. It's a simple salad of tomatoes that are dressed with a balsamic dressing.
As I was mixing the dressing I had to make a few adjustments. The tablespoon of Dijon mustard was too overpowering. I increased the balsamic vinegar and walnut oil a bit, but it still needed something more. So, I added about 2 teaspoons of sugar and that seemed to do the trick.

It was very tasty and works well at room temperature, so this would make a great make-ahead dish for a summer barbecue.

A tomato salad is my favorite...this one sounds delicious. Your photo looks like I could just pluck a tomato off my screen...I wish I could.

hmmmm. i'm not usually a tarragon fan but this sounds super tasty. i love the walnuts :)

I think this sounds great. When I buy fresh tarragon for a recipe I always look for ways to use it up. This sounds very nice.
