London Broil and Steak Salad

After discovering last week just how much Our Boys loved the London Broil, we just had to have it again. This time I used a marinade from one of those grilling magazines I picked up last summer from Better Homes and Gardens. It was a quick and simple marinade that was tasty - with the bonus that I had all the ingredients already on hand.

Once again, we had a nice amount leftover to have another night. While my boys enjoyed digging into it again as it was, I decided to throw together a nice salad. I added some gorgonzola cheese crumbles, chopped walnuts and dressed it simply with extra virgin olive oil and balsamic vinegar.

It was delicious with the contrasting flavors and textures in it. A nice and filling main dish salad. I'll be using leftovers for this again.

This is a quick and easy marinade that you can throw together a few hours before you want to cook dinner.

Wine-Shallot Marinade
Source: Better Homes & Gardens: Grilling, 2008

In a small glass bowl, whisk together:
1 cup of white wine
1/4 cup each: chopped onion and shallot
1 teaspoon canola oil
1/2 teaspoon each: freshly ground black pepper & dried basil
1/4 teaspoon dried rosemary
1 bay leaf

Pour over London Broil in a large plastic bag. Allow to marinate for at least 3-4 hours before broiling or grilling.
