Oh, so good... Fried Pasta

I think we all have one dish that our mom made when we were growing that was so completely wonderful, and yet not so healthy but we loved it and craved it. If we were lucky, we watched and learned to make it ourselves. My Husband managed to pick up Fried Pasta from his Mom. Now, when I was dating My Husband and he made it for me, I had no idea what I was in for since Fried Pasta was not something I had even heard of before. Such a simple idea, but really tasty and hard to resist.

I don't think there is an actual recipe for this, but I'll give you the basics and I'm sure you can manage to make it for yourself. And, you simply must give this a try! First get the pasta cooking, then chop a large onion (we use either the large yellow onions or Vidalia's when they are available). Heat canola oil (about 3-4 tablespoons or so) in a large non-stick skillet over high heat, then add the onions and cook until soft and beginning to brown. Allow the pasta to cook until slightly overdone, then once the onions are nicely browned, add the pasta and give a good stir. Once the pasta starts to get crispy, lower the heat to medium and allow to cook until the pasta gets crunchy. At this point add a healthy sprinkling of paprika over the pasta. You will need to be patient and not stir the pasta too often or it won't get to the crunchy stage. It's so good, and even better when you serve it with a grilled steak smothered in chopped garlic (not tonight, but that's my favorite combination), and some fresh corn on the cob. Yum!

Wow Patsy, I've never heard of that before but it sure looks like one of those things that if it was sitting in front of me, I wouldn't be able to stop munching on! My kids would probably flip out over it too.

Well... considering that I've been "frying" noodles for years making Chinese food, i guess this isn't that strange, at all. I just did a stirfry noodle dish the other night.

I do think I'll give this a shot, though. It's definitely intriguing!

My Nona and Moma often did something like this. It's a cure for leftovers at our house though. Any kind of leftover pasta gets tossed into a skillet and fried until crispy...so bad, yet so good. You should see what it can do for leftover meatballs and pasta...mmm...

my mother had said that her father always did this with leftover pasta (especially angel hair), and considering that his wife was italian, 2nd generation over, i bet they had their share. my mom just said he threw in the pasta and fried it, but i will have to give this a try.. also i think i will also fry in the meatballs, as gracie la rose suggested.

i just to say that i made this tonight. im 14, and i just came back tonight from a movie, and decided to make myself some dinner.
i made this, but i basically changed it completly. i grabbed a non-stick pan, and i threw in the leftover pasta, for a nice dinner bowl amount. then i threw on it leftover sauce and cut up meatballs. i chopped up onion until i had about a handful, and then i chopped up about a handful of fresh parsley. then i seasonsed( for the tomato sauce)with a sprinkle of sugar, garlic powder,(we didnt have any fresh garlic) oregeno, paprika, and parmesan cheese. I then heated over a medium heat, stirring evry now and then until starting to brown. it was the most delicious meal ever,like fast and tasteful. i topped with more parmesan, and a parsley leaf for garnish. simply tasteful.

My mom does exactly the same every time pasta is left from some meal. You can also add stired eggs and some parmesan, it is simply delicious.

Crispy Mac

A party snack idea with a twist!

4 cups curly macaroni/twisty pasta
1 tablespoon oil
Oil for deep frying


One of the following seasoning mixtures:


2/3 cup Parmesan cheese, 2 teaspoons Italian seasoning and 1 teaspoon garlic salt


2/3 cup Parmesan cheese, 1 teaspoon each chili powder, cumin, and onion salt


1 teaspoon lemon zest, 1/2 teaspoon pepper, and 1/2 teaspoon salt, or to taste
Or for a sweet version try:


2 tablespoons lemon zest (or orange), 1/2 cup sugar, and 1/4 teaspoon salt

Cook the pasta in boiling salted water with 1 tablespoon oil until just tender.

Drain, spread onto wax paper and blot away excess moisture with paper towels.

Fry the cooked pasta in batches in hot oil (375°) until golden brown. Drain on paper towels.

Transfer the fried pasta to a serving bowl while still warm and moist. Sprinkle it with the seasoning of your choice. Toss and serve.

I'm 12 and we often have pasta and this tastes really good.It's quick easy and i can add a lot of things to it make it taste even better! eg:spices,pesto,tomato sauce,ect

It was good. The pasta is not boiled, only fried.
