Mashed Sweet Potatoes - Pressure Cooker

Well, tonight we went back for another shot at the Honey Nut Chicken Sticks that we tried last week. Only this time, I actually followed the instructions and put the cereal mixture in the food processor as the recipe said to... only to decide that it was crispier just putting them in a ziploc bag and crushing them that way. Oh well... sometimes those mistakes are actually the way to go rather than correcting them.

For our side dish I wanted to try making mashed sweet potatoes in the pressure cooker. I followed the recipe for the regular mashed potatoes and then added a couple of tablespoons of brown sugar. They were very good, and I must say my oldest enjoyed them the most since he asked that I make them again.

Sorry, no pictures since I wasn't happy with how they turned out. I just received the March Cooking Light, so I am anxious to take some time to read it and choose some recipes to try. My Husband has already chosen the Ginger Shrimp Pot Stickers with Spicy Peanut Dipping Sauce as the first one to hit the menu plan for next week!
