Simple and Healthy {Stovetop Sausage and Mushroom Casserole}


One good thing about starting this blog, is that as I think of recipes that I have made in the past I want to make them again. Tonight's dinner was from a cookbook called Weight Watchers Make it in Minutes. I LOVE this cookbook. It is broken down into 15, 20 and 30 minute recipes. Each section has breakfast, lunch and dinner ideas and the WW points are specified as well. They also have some suggestions on what to pair with the dish. I would say there are only a handful of recipes from this cookbook that didn't turn out quite as expected, but the majority are flavorful and filling.

A nice thing about this dish is that you really can have it on the table in about 30 minutes. Since I do work full-time and have to make a couple of stops to pick up my boys every afternoon, dinner needs to be something I can put together while getting them settled and supervising homework. Stay tuned for another 30 minute recipe tomorrow night... a special request from My Husband.



Stovetop Sausage and Mushroom Casserole

Ingredients
1/2 pound sweet Italian turkey sausage (about 3 links)
2 cups fresh shiitake mushrooms (I always use Baby Bellas - mini Portobello's)
1 onion, coarsely chopped
2 cups reduced sodium chicken broth
2 tablespoons grated Parmesan cheese (I sometimes omit this)
1/2 teaspoon coarsely ground black pepper

Directions
Slice open and remove the casings from the sausage.

Spray a large non-stick saucepan with non-stick spray; heat over medium-high heat. Add the sausage, mushrooms, and onion breaking up the sausage with a fork. Cook until the sausage is browned and the mushrooms and onion are tender, about 8 minutes. Add the rice, stirring to coat, and broth; bring to a boil. Cover, reduce the heat, and simmer until the broth has evaporated and the rice is tender, about 20 minutes. Stir in the Paremsan cheese and pepper.
