Carrot Souffle {family recipe} #SundaySupper

This week's #SundaySupper theme is "All Things Orange"!  As soon as I heard the theme, I knew exactly what I wanted to make so I joined in right away!  This week's #SundaySupper is being hosted by The Meltaways, so be sure to head on over and show some love there, too!

We have a favorite side dish around the holidays in our family that has become My Oldest son's favorite dish... he always wants me to beg for leftovers (if there are any!) so that he can have it reheated... for breakfast, lunch or a snack!  Yes, it is that good!

This recipe began with my sis-in-law who lives in Arizona... My mom-in-law had it there and brought the recipe back with her to share at the holidays we celebrate with family here in New Jersey.  It's become a staple whenever there is a holiday.

It's sweet, like sweet potato casserole (without the marshmallows)... and INCREDIBLY easy to make.  Don't let the word souffle worry you... you really can't mess this dish up, and it's a gorgeous orange color to add to the dinner table when serving turkey or roasted chicken or brisket... I made it to go with roasted chicken last week and it was a nice "treat" as it wasn't a holiday other than making dinner for my family to enjoy together.  Sometimes you do need to pull out those special dishes as a surprise for what would be just another ordinary dinner.






Carrot Souffle

Recipe by My sis-in-law
Ingredients
  • 1 pound carrots
  • 3 eggs
  • 1/2 cup sugar
  • 3 tablespoons flour (substitute cake meal for Passover)
  • 1 teaspoon vanilla
  • 1/2 cup butter, melted
Cooking Directions
  1. Cook carrots in water until soft (about 25-30 minutes); drain and allow to cool.
  2. Put carrots into a food processor and blend. Then add eggs and blend again.
  3. Add remaining ingredients and blend thoroughly. Scrape the sides of the bowl and blend a few more seconds.
  4. Pour into a 1 quart casserole that has been coated with cooking spray.
  5. Bake at 350 degrees for 40-45 minutes - do not underbake!
  6. Can be served hot from the oven or warmed up before the meal.

I've made this every Thanksgiving for years! What is really good as well.....last 5 min of baking, add a mixture of softened butter, brown sugar and crushed corn flakes...sprinkle on top and bake..yummy!
