Yummy Appetizer (recipe: Ranch Pinwheels)

Saturday night we were invited over to our neighbors for dinner. Since I don't like to show up empty handed, I made some of my Husband's favorite appetizers, Pinwheels. They are extremely simple, so they were a snap to throw together. I started making these years ago, and can't even remember where I found the original recipe. You can vary the ingredients to add pimientos or skip the green chiles all together. Depends on your taste. I think I have even seen a version of these served with salsa for dipping. They are always a hit, and I don't think I have ever seen more than 1 or 2 of them leftover afterward.

Ranch Pinwheels (aka: Mexican Pinwheels)

Ingredients
  • 8 ounces fat-free cream cheese
  • 1 package Ranch dressing mix
  • 1 bunch scallions, chopped
  • 8 ounce can black olives, sliced
  • 4 ounce can green chilies, chopped
  • 1 jar pimientos
  • 1 package 8-inch flour tortillas
Cooking Directions
  1. In a bowl, use a hand mixer to combine the cream cheese, Ranch dressing mix and scallions.
  2. On one tortilla, spread a thin layer of the cream cheese mixture, making sure to cover completely to the edges. Then sprinkle the black olives, green chiles and pimientos over it. Carefully roll up and seal the opening with the cream cheese mixture. Repeat until you don't have any cream cheese left.
  3. Refrigerate for at least 1-2 hours, overnight is better. After chilling, cut into 1/2-inch bite size pieces.
