Double Chocolate Dream Cookies {recipe}

Last summer I didn't do a lot of baking... and I have heard about it from My Oldest.  He is my biggest fan when it comes to my baked goodies.  It seems that it is noticed when I don't have homemade cookies or some other treat for them to enjoy each week.  Yes, I have spoiled them!

I don't really mind because baking is one of those things that I really enjoy and when I have time on the weekend to bake it is a good thing.  The house always smells yummy and I get the chance to try out new recipes on my willing taste testers!

I found the recipe for these cookies in a cookbook I didn't even realize I had!  Shhhhh, don't tell My Husband since I'm sure my growing collection of cookbooks is something he'd like to see begin to shrink! Of course, if I had cleared this one out we wouldn't have been able to enjoy these fabulous cookies!

This recipe is from a Nestle Best-Loved Cookies book... I'm not sure where I got it, but now that I have found it I'll be trying some more cookie ideas from it.

Th recipe is very simple and starts with your basic cookie dough ingredients.  Then, you add cocoa to it (I went with Dutch process cocoa).  This amps up the chocolatey goodness!  You can't tell from the photo, but I used a combination of white and milk chocolate chips - this way My Youngest would know I was thinking of him when I made these.  He loves the contrast that white chips add to the cookies... and I think he may prefer them over milk chocolate chips.

These cookies will stay moist in a tightly sealed container for about a week - assuming they last that long!




Double Chocolate Dream Cookies

Recipe by Adapted from Nestle Best-Loved Cookies
Ingredients
  • 2 1/4 cups flour
  • 1/2 cup Dutch process cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • 2 eggs
  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips
Cooking Directions
  1. Preheat oven to 375 degrees.
  2. Combine flour, cocoa, baking soda and salt in a bowl; set aside.
  3. In a stand mixer combine the butter, both sugars and vanilla in the bowl and beat until light and creamy.
  4. Add the eggs and beat until fully incorporated. Gradually add the flour mixture. Add the chips and stir until combined.
  5. Drop by teaspoonful onto a parchment lined baking sheet. These cookies do not spread much, so they can be a little closer together.
  6. Bake for about 8-10 minutes - the cookies will be puffed up when done. Allow to stand on the cookie sheet for about 2 minutes, then remove to wire racks to cool completely.
