Land O' Lakes: Scrambled Egg, Spinach & Fontina Wrap

Holiday baking season has arrived!  Have you started planning all of the wonderful goodies you are going to bake/make and share with your friends and family this year?  I've got a long list of goodies written and now need to put my plan in place to get started. 

With this in mind, it was a nice surprise to receive an email from the folks at Land O' Lakes asking me if I would like to try their eggs and share how I used them.  I happily said yes, knowing I had several uses for that dozen eggs. 

One of the things that I like about the Land O' Lakes products is that they have the Box Tops for Education labels on them.  Our school collects them and I've even found them on their boxes of butter.  Big score at this time of year!

In addition to some baking I did for Thanksgiving with family and my Veggie Thanksgiving, I found another way to use some of these eggs.  A way to really get a taste of them and enjoy a hit of protein for breakfast.

I've been trying to make sure I incorporate veggies wherever I can lately... for so many reasons, but especially because they help keep me full longer.  That coupled with the protein in the eggs, makes for a fantastic start to the day!

The eggs were nice and fresh.  They cooked up beautifully... and would have been even nicer as an omelet, but I haven't mastered that skill yet.  Still working on it, but when the omelet doesn't work out just put everything into a wrap and act like you planned it that way.  No one will ever know.  I promise!

You can use whatever cheese you like, but I love the way fontina melts perfectly into the eggs.  Just dice it small - it's a very soft cheese and if you don't think to stick it in the freezer for a few minutes first, it's not so easy to grate it.  Trust me, I know about this first hand.  If you are short on time, just dice it up nice and small, it will still melt beautifully.  Add some baby spinach leaves and putit all in your favorite wrap for a great breakfast!

I usually use Land O Lakes butter and so I should save my box tops for you! Will do.

This wrap sounds super yummy. Definitely a great filling start to the day!

Those eggs look so fluffy and amazing. I love egg wraps in the morning. Will have to try this combination soon.
Ooohhhhh... i vote for egg wraps, not just for breakfast, but any time of the day! Great recipe. This is now on my weekly meal planner :)
