Happy Hanukkah! (Homemade Gifts: Rainbow Cookies)

Happy Hanukkah to everyone celebrating the 1st night tonight!  We had a wonderful evening of gifts and latkes! 

As promised on the Family, Friends and Food Facebook page, tonight I am sharing my new favorite cookie!  Rainbow Cookies!!! 

There is something special about these cookies that I simply cannot resist.  I've never attempted making them before because I thought they would be much too complicated.

All of those pretty layers just call out to me whenever these cookies appear on a tray at a gathering.  The almond flavor is spectacular!

I found the recipe at Smitten Kitchen, and Deb's additional notes and instructions were perfect!  I must have read through the recipe a dozen times before beginning, simply because I wanted these cookies to turn out as wonderful as I envisioned them.

While the process itself is not complicated, these are not going to be ready in a couple of hours.  There is chilling time involved, which is not active working time but must be considered before you begin.

If you have never had the pleasure of tasting one of these cookies, I urge you to make your shopping list and get busy baking!  They are not too sweet, but are definitely addictive.  Both of My Boys told me these were amazing!  This is somewhat surprising since My Youngest is a chocolate chip cookie kind of kid... and he even asked for another one tonight as I was packaging up my gifts to give to friends.

I've added them to my cookie gifts this year, and anticipate making them a regular part of my holiday baking for years to come.

Very, very nice! I've seen a cake with a similar color scheme at Costco. I'd love to make these before Christmas... let's see if I have time!

I posted about these cookies last year and they were such a hit that I'm never going to be able to get through another holiday season without making them! They've always been my favorite cookie, so that's totally fine by me!
