Strawberry Muffins & a Special Giveaway

First, I want to welcome my new readers! I've noticed that there has been an increase in subscriptions to my little 'ole blog, and want to welcome each and every one of you! My posting has been a little off the last week because we are still getting accustomed to our new routine with the start of school. I'm hoping to be a bit better this week, and if you read to the end you'll find out about a cool giveaway for this week.

This past weekend was Rosh Hashanah (the Jewish New Year), so we spent part of the weekend with My In-laws as we have been going to their temple for the holidays for quite a few years now. After the day in temple, we have dinner together to bring in the new year. Our traditional meal includes Chicken in Phyllo Dough (you can find the recipe HERE).

Our dessert was an assortment of different things. Baked prune plums were served over ice cream (simply delicious!), coffee cake and a bowl of fresh strawberries and cantaloupe. Since My mother-in-law bought the big container of strawberries, I was the lucky recipient of the rest of the container when we left to go home.

Figuring I needed to get started using them beyond just prepping them to eat, I decided to search for a Strawberry Muffin recipe. I ended up making some adjustments to a Cooking Light recipe for Cranberry-Orange Muffins and I think they turned out perfectly!


From Family, Friends and Food

For a low-fat muffin, they turned out perfectly moist and not a smidge dry at all. I left out the orange rind and subbed in 2 cups of coarsely chopped strawberries for the cranberries. I didn't think the sprinkling of sugar over the tope of each muffin really added anything, so I don't think I would bother with it next time.

Now, for the giveaway news! As you may (or may not) know, October is Breast Cancer Awareness Month. Most people have been touched if not directly within their own family, perhaps someone they know by this disease. That muffins look to good this AM. I want two of them as I'm running out the door. Cool hat and get up. I would proudly wear it on our Breast cancer Walk we do each year. I lost both my parents to cancer, it's a horrible disease. Thanks for the contest! Have a great day! :)

I would love to win this giveaway. My Aunt was diagnosed with breast cancer a few weeks ago and is hoping to be able to get surgery this week (they had to post pone it last week because she has infection where they did a biopsy).

I'm a big supporter of cancer charities - I lost one of my aunt's to breast cancer almost 25 years ago and my grandfather to prostrate cancer.

So glad the berries went into such a lovely form. I'm going to have to try the recipe.
All cancers are awful, and after all the scientific work done, there still is not only not a cure, but no prevention. Hopefully in my lifetime they will be able to come up with something.
