Green Beans & Cherry Tomatoes from Gastrokid Cookbook (GIVEAWAY!)


I am so excited to tell you that I am hosting a giveaway for the fabulous cookbook, The Gastrokid Cookbook: Feeding a Foodie Family in a Fast-Food World! Read through to the end of this post for details on how to enter my giveaway!

Tonight, I decided to try another recipe from the Gastrokid Cookbook in honor of this giveaway. I had picked up some French green beans last weekend from Costco and some beautiful grape tomatoes from the farmer's market. So, the obvious choice was to make Green Beans & Cherry Tomatoes.

This was another simple recipe that I won't need a recipe to make again. The ingredients are simple: green beans, cherry tomatoes, olive oil, and lemon juice. This is a wonderful way to enjoy fresh green beans this time of year. They maintain their crisp crunch by blanching them for just a few minutes. Once that is done, toss them with the halved cherry tomatoes and drizzle a bit of olive oil over the top and finish with a squeeze of lemon juice.


This is such a gorgeous side dish, it would be a nice addition to any potluck or barbeque over the warm summer months. As you can see from this post and my last one (HERE), this cookbook is filled with simple recipes that busy parents can make on a weeknight. This cookbook makes getting a healthy dinner on the table so easy that family dinner can happen several times a week.

yay! I'm the first one! Well, I actually don't have kids, but it's just as difficult getting my fiance to eat his veggies! The hardest thing is trying to convince him you should be able to taste the veggie. But I have found some not too unhealthy ways to get him to eat zucchini and luckily with a little cheese, even low fat, I can convince him to at least try almost anything!

This looks like the perfect cookbook for me. The hardest part of getting my kids to eat health is for me to get motivated to cook more veggies. I'm just beginning to like them myself and really need some great recipes.

Our issue is that I prefer steamed or blanched veggies and my daughter prefers them raw...at least the ones we both seem to like.

I also don't actually have children, but am often babysitting nieces and nephews, cousins, friends children, etc. and really struggle with getting them to try new veggies, or try anything besides boxed mac and cheese for that matter. If I put cheese on the veggies, they'll eat them...

I'd love to get my hands on that cookbook! What a beautiful side dish, I love those green beans!

It's been getting easier lately to get my kids to eat healthier, but it comes and goes. They don't like things as "seasoned" as I do...veggies are still somewhat of a challenge, but it seems like they are liking them better raw...they aren't too crazy about cooked veggies it seems.

I am pretty lucky because my kids eat pretty healthy - I've always fed them fresh foods so they don't know any different.

The green beans and tomatoes are a perfect side dish.
No kiddies in our home yet but what a fantastic giveaway. I must say those green beans look delicious - if only my husband would eat beans!

My daughter is sooo very picky. I have to sneak food into meals to make her eat. When something calls for broccoli I mix in some spinach also.

That looks so simple, yet so good!
I'm lucky that two of my kids aren't picky at all. My 3 year old, on the other hand, is totally picky. It is impossible to get her to eat anything! She loves to snack, so I just make sure we have healthy snacks on hand all the time so that when dinner rolls around, I don't stress about what she didn't eat because I know she got some good stuff in at snack time.
This looks like a fun book! My son is super picky, so I'm always looking for new recipes that he'll actually eat.

Wow, I think the hardest is getting them to realize that looks aren't always indicative of taste. I always have to make them look pretty first!

I love that salad! We make it all the time too, especially when we have green beans and tomato from our garden. They just taste so sweet when fixed simply like this.

I suppose I am lucky that my girls aren't picky eaters and they really love vegetables.

I've always found that when they are resistant to eating certain foods, I don't force them but I keep making it anyway. Eventually they will take small bites of it and that starts them in a habit of eating it.

I also tell them to never say they don't like something without having tasted it first. If they tasted it and don't like it, then I don't give them a hard time about it so long as they are still eating other healthy stuff.

It is so hard to get my kids to eat veggies. I do not know what happens. As babies, they all loved the bright colors on their plates, but as they got older they stopped liking them. THe good part is that as teens they have started to like them again. I guess it is full circe. I would love to win a copy of this cookbook, it looks awesome and I am always looking for new recipes to make for my 5 kiddos.
