Tequila-Lime Marinated Chicken

I'm in my third week of working with a personal trainer, and boy is she pushing me! It's really a good thing because I know the way I work. I learn the routine, continue doing it until I get bored and then I stop completely. Not exactly a good way to get results, huh? Well, thank goodness we have a gym at work and I have the luxury of having someone work with me whenever I can get away to exercise. I've actually been scheduling my days to workout on my calendar at work. This ensures that I don't try to skip out on it. So far, I am happy with my new routine of working out at home and adding in extra workouts at the gym. My personal trainer doesn't allow me to get bored, and changes the exercises we do each time.

Each week, I get a new "assignment" related to my eating habits. She is nice enough to allow me to choose what I want to change though so that it will be easier for me to incorporate it into my life. This week, I am working on eating more salads for meals. Which means I'm eating less pasta, and that is often one of my "trigger" foods (if you have ever done Weight Watchers, you know what I'm talking about). So, tonight I decided to do a simple marinade and grilled up some chicken. I also had some wonderful curly lettuce, tomatoes and cucumbers that I picked up at the farmer's market on Sunday.

When I got home from work, I had an idea that I wanted to marinate the chicken in some kind of tequila and lime mixture. I just needed some guidance on amounts. I did a quick search and none other than one of my local blogging friends popped up in my Google search: Sweetnicks! She had made a version of what I was looking for from Rachael Ray. I didn't follow the same recipe exactly because we don't care for cilantro and My Boys aren't big on hot sauce.

What I ended up with was a simple marinade with only 3 ingredients. I will marinate it for longer than 30 minutes next time as the flavors were not as strong as I would have liked. My Youngest gave me the "thumb's up" and told me that the chicken was "yummy". I only had a little bit leftover, so I know that means it was enjoyed by everyone.

Simple Tequila Lime Marinade

Ingredients

  • 1/2 cup tequila
  • 1/4 cup canola oil
  • juice of 4-5 limes

Directions
Mix together, then combine with chicken in a large ziploc bag and marinate for at least 30 minutes.

Oh well when you mentioned tequila... "lol" "giggles" How is the summer treating you? It is HOT, HUMID here in Japan and I don't very much like it, worse than FLORIDA! = (

Patsy that is great that you are working out. I have been in a year long rut of not working out and I am paying for it! Maybe I should get a trainer!

so simple but i'm sure it's full of flavor!

about the brownies - I would say they were moderately (not super) dense and fudgey... if you like dense and fudgey i would recommend the chipster brownies i linked in that post
