A is for Asparagus

With two Boys, I am often trying to encourage them to try vegetables that they may not have liked the last time they were served. Not too long ago, My Oldest found out that Roasted Cauliflower is something that he could eat and enjoy. So, when I found some asparagus at the produce market I thought it was time to give it a try again.

In the past, we've had it steamed and sauted. This time, I wanted to roast it a bit and see if that would please My Boys. So, after a bit of internet research I decided to keep things simple this time. Just a bit of extra virgin olive oil, Kosher salt and freshly ground pepper. I roasted it at 425 for about 15-20 minutes - just until it was tender.

It had just the right amount of simple seasonings, and the best part was that everyone enjoyed it! Of course, My Oldest ate the whole piece and asked for 2nds and 3rds. My Youngest decided he didn't like the tops, but the bottoms were worthy of eating. Which I found funny because most people don't like the bottoms.

I've got a few more new vegetables to try on them throughout the next week and will share their opinions as we try them. I'm on a mission to add more vegetable side dishes to our weeknight meals beyond the "usual".

Peanut Butter cookies will be making an appearance next time!

I've tried the roasted ones on my little guy before. He doesn't seem to like them. Just likes them steamed w/ a little mayo (thankfully he'll eat them that way!) I, on the other hand, LOVE roasted asparagus... just as you describe!

Yum...i sprinkle with a little bit for fresh parmesan too...its good. Ha! Look at me give the better cook an idea! :=)

I have only been reading for about 6 months or so but have tried a few recipes and everyone has liked them!
I can eat asparagus every day that it is season! It is the best!

Oh I love asparagus! My hubby, however, does not! I have tried so many ways, to no avail, until today! I made an amazing vegetable soup with asparagus and he loved it! I love it roasted, like you have here. I could eat a whole bunch by myself!

This is how I make asparagus, too, except I add a bit of fresh lemon juice. Yum!

All I have been doing lately is roasting vegetables. Our latest favorite is roasted green beans. No Thank You Boy said they were his new favorite vegetable. I didn't even know he liked vegetables at all.

Too funny, I just posted some roasted asparagus too, great minds must cook alike! My boys were not keen on the asparagus, but I was happy they ate the fish I cooked with it. Yours looks delish!

I love any vegetables if they're roasted, and I find too that they're often non-veggie-eating-people friendly! Brussels sprouts are a fave in our house! (I've also roasted white asparagus.)

I'm taking on the asparagus travel next week for the husband. I've never made it before, but I'm going to try stirfrying some for him because he loves it so much.

Roasted asparagus sounds great. I always steam it when I make it but this sounds really good.
