Green Beans with Mushrooms & Shallots

I decided to focus a bit more on side dishes this week. It seems like I serve the same side dishes each week with no pizazz. Not that my family has a problem with it, it's more me... I like to change things up to keep dinner interesting. Also, if I can find some fantastic side dishes that are a snap to put together I can get excited about the extra veggie servings I really should be eating each day.

In an effort to make my purchase of the new Ellie Krieger cookbook worth it, I selected another recipe to try, Green Beans with Mushrooms and Shallots. I must say that choosing this recipe was a no-brainer. The combination of green beans, mushrooms and shallots is guaranteed to work well together. Luckily, I have a fantastic produce market where I was able to find fantastic green beans, mushrooms and shallots.

The green beans are steamed in the microwave and have a nice snappy crisp-ness to them which is complimented by the the sauted shallots and mushrooms. I used a combination of white button mushrooms and baby bellas, so there was a filling "meatiness" to this dish. I had some of the leftovers for lunch today and it really was quite a nice lunch on it's own. This recipe was very easy to throw together and if you have your act together more than I do, you can prep everything ahead of time and all you have to do is the quick 10 minutes worth of cooking while the main dish finishes up.
